Mediterranean Salad

Our apartment lacks air-conditioning, which means when things heat up we change our diet to compensate. Unfortunately, we can only eat so much watermelon.

Tomatoes and cucumbers are both light, flavorful vegetables that hydrate the body. Vinegar and lemon add to the cooling sensation, while salt replaces electrolytes lost from sweating. This salad is the perfect hot weather treat. Black pepper and ginger add balance by providing a touch of heat. The result is a filling salad that leaves you satiated and refreshed!

Add more substance to your salad with garbanzo beans,
salad beans, olives and/or feta cheese. The healthy fats and protein will keep you energized for longer!

Tips and Trick

After mixing, let your salad sit for 2+ hours. This allows the flavors to properly mingle! You may find the salad a bit dull before the resting period, but after you will find it absolutely BURSTING with flavor.

  • 2 cups chopped cucumber
  • 1 cup chopped tomato
  • ½ lemon or 1 tbsp lemon juice
  • 2 tsp apple cider vinegar
  • 1½ tsp dried cilantro
  • 1 tsp basil
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ⅛ tsp ginger

Add ingredients together, mix well and season to taste. Allow to sit covered and refrigerated for 2+ hours.

Variations

  • 1½ cups garbanzo beans or salad beans
  • ½ cup feta cheese
  • 1 cup sliced or whole olives
